Bean sprouts and bulgur salad

Ingredients

  • 1 cup uncooked bulgur
  • 1 cup boiling water
  • 1 cup bean sprouts
  • 450 g cherry tomatoes, halved
  • 1 cup parsley
  • 1/3 cup mint
  • 2 Tbsp dill
  • 1 cup green onions
  • 1/4 cup lemon juice
  • 1 Tbsp olive oil
  • Pinch of salt
  • 1/2 Tsp black pepper

Directions

  • 1 Combine the bulgur and 1 cup of boiling water in a large bowl. Cover and let stand 1 hour or until bulgur is tender
  • 2 Add bean sprouts, tomatoes, and remaining ingredients to bulgur; toss well.
  • 3 Let stand at room temperature 1 hour before serving.
